Some good casserole recipes. Mom, you used to have one for "Mock Turkey Loaf." Do you still have, or can you remember, it? I have decided that casseroles are the easiest thing to prepare for potluck and dinner, when we want/need leftovers for lunch. But, I have very few casserole recipes. Anybody have some they would like to share?

I can't remember the mock turkey loaf recipe exactly, but I do remember that it had eggs, skallops, ritz cracker crumbs and evaporated milk Oh and cheese (a real colesteral clogger), chopped onions and it was seasoned with sage. Shouldn't be too hard to recreate from that.

try this:
! can skallops chopped
2 eggs beaten
11/2- 2 cups cracker crumbs
1 cup chedder cheese
1 can evaporated milk
1/2 chopped onion
1 1/2 t. sage

let me know how it turns out Binladen I only used old binny because he has a chef's hat on

I will have to try that...I know it's not exactly "healthy," but I remember it tasting good! Smile


BTW, you could have used afro and just pretended the afro was a black chef's hat. Smile
